Ingredients

  • 1 cup almond flour
  • ½ cup arrowroot flour
  • ¼ cup coconut flour
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup fresh or frozen blueberries

Directions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Melt the coconut oil and combine all of the ingredients (except the blueberries) and mix until the batter is fully combined and smooth.
  • Stir the blueberries into the batter after you have fully combined the dough.
  • Scoop about 3 tablespoons worth of dough onto the baking sheet and mold the dough into a circle. repeat this process until all of the dough is used (It should make 8 biscuits).
  • Optional: Top with whipped cream (or whipped coconut cream) and fruit preserves!
