Description

A terrific, healthy snack that requires only a few ingredients and measures in at just 25 little calories a pop. They can be made earlier in the day and stored in the refrigerator until ready to serve. Simply reheat in a 400 degree oven until warm.

Ingredients

  • 1 pound small red potatoes (about 12 potatoes)
  • Olive oil
  • 1/4 cup La Terra Fina Parmesan Kale Greek Yogurt Dip & Spread (or other La Terra Fina Dip)
  • 2 tablespoons finely grated Parmesan cheese
  • 1 tablespoon minced chives (optional)

Directions

  • Put the potatoes in a medium pot and cover with cold water by 1 inch. Bring to a boil. Once the water boils, cook until the potatoes are tender enough that you can easily slide a paring knife into the center, about 12 to 15 minutes (time varies depending on size of spuds).
  • Drain. Preheat the broiler.
  • When potatoes are cool enough to handle, drizzle a teaspoon or 2 of olive oil over and coat them with your hands. Cut them in half and cut a sliver of potato off the bottom of each half so they sit upright without wobbling.
  • Spoon 1 teaspoon of La Terra Fina Dip onto each potato. Sprinkle about 1/4 teaspoon of Parmesan over the top .
  • Transfer potatoes to a baking sheet and broil until golden brown. Sprinkle a tiny pinch of chives on top and serve.
  • Serves: Makes 24 Potato Bites
