Ingredients

  • 1 1/4 cups (2 1/2 sticks) butter, room temperature
  • 6 Tbsp granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 cup (2 sticks) butter
  • 1/2 cup Karo light corn syrup
  • 1 1/2 cups packed light brown sugar
  • 2 Tbsp heavy cream
  • 1 pound pecans, chopped

Directions

  • Preheat the oven to 350 degrees F. 
  • For the crust, cream the butter and granulated sugar together until light and fluffy, about 3 minutes. Add the eggs and vanilla and mix well.
  • Stir together the flour, baking powder, and salt. And add to the mixing bowl. Mix just until dough is combined. Flour your hands and press the dough evenly into 9x13 baking sheet lined with parchment paper. Bake for 12-15 minutes or until the crust is set but not browned. Allow to cool.
  • For the topping, add the butter, corn syrup, and brown sugar to a saucepan over low heat and stir until butter is melted. Raise the heat and boil for 3 minutes. Remove from heat and stir in heavy cream and chopped pecans. Pour over the crust and smooth into an even layer. Bake for 20 to 27 minutes or until the filling is set. Allow to cool completely. Then cover and refrigerate for at least 2 hours. Cut into bars and serve.
