A traditional European snowball cookie that is crunchy and robustly spiced. Despite the literal pepper nuts translation of the name, these cookies are nut free!

Ingredients

  • For Cookies:
  • 3 1/2 C. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground cardamom
  • 1/4 tsp. ground white pepper
  • 1 C. (2 sticks) unsalted butter, softened
  • 1 C. granulated sugar
  • 1/4 C. molasses
  • 1 egg
  • For Coating:
  • Powdered sugar to coat cooled cookies (about 1 1/2-2 cups)

Directions

  • In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, cloves, cardamom, and white pepper; whisk to combine.
  • In a large bowl, cream butter and sugar together with an electric mixer until fluffy. Beat in egg and molasses, stirring until blended.
  • Gradually add the flour mixture, stirring at low speed until combined.
  • Shape dough into a disk, wrap tightly in plastic wrap, and refrigerate for several hours, or up to 1 week.
  • Preheat the oven to 350 degrees F. Line baking sheets with parchment paper or a silicone baking mat.
  • Roll dough into 1-inch balls, and place 2 inches apart on prepared baking sheets.
  • Bake for 12 to 14 minutes or until lightly browned. Cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
  • Roll cooled cookies in powdered sugar to coat. If you like a lot of powdered sugar, roll once in the powdered sugar, allow them to sit for a minute, and then roll them again. (My preferred method.)
  • Store in an air-tight container at room temperature, or freeze for up to 3 months. Note: If you freeze cookies, roll them in powdered sugar again, once thawed.
