Pina Colada Chia Overnight Oats are creamy overnight oats with chia seeds, coconut, Greek yogurt, and plenty of fresh pineapple. Theyre easy, delicious, and will make breakfast feel like a tropical getaway!

Ingredients

  • 2 cups old fashioned rolled oats*
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 2½ cups coconut milk or the milk of your choice
  • 1 cup plain Greek yogurt (I used 2%)*
  • 1 cup chopped fresh pineapple (crushed pineapple may be substituted)
  • ½ cup sweetened shredded coconut

Directions

  • Place the oats, chia seeds, maple syrup and milk in a medium bowl and stir to combine. Cover with plastic wrap and chill in the refrigerator overnight.
  • Remove the plastic wrap the next day and stir in the Greek yogurt, pineapple, and coconut. Top with more coconut and pineapple if desired. Serve and enjoy!
