• 750g (1 1/2lb) waxy potatoes, such as Charlotte, sliced lengthways
• 1/2 lemon, finely sliced
• 3 fresh or dried bay leaves
• 3 tbsp olive oil

Directions

• A tasty twist on classic roast potatoes. The lemon and bay leaves add an exciting flavour that is really delicious when paired with a seafood-based main. Preheat the oven to gas 6, 200°C, fan 180°C. In a large bowl, toss the potatoes with the lemon, bay leaves olive oil and some seaoning. Spread the potatoes out on a baking sheet in a single layer.
