Directions

  • Cook the quinoa according to the package directions. Cover and set aside.
  • Add the olive oil, asparagus, and garlic to a sauce pan. Saute until crisp tender. Stir in the cooked quinoa and diced red peppers. Heat through. Season to taste with the salt and pepper. Top with grilled chicken. Makes 4 servings.
