  • 24 pitted dates
  • 4 ounces Manchego cheese, cut into thin 1-inch x ¼ -inch pieces
  • 6 ounces Serrano ham or prosciutto
  • ½ cup bourbon
  • 6 tablespoons butter
  • ¾ cup brown sugar
  • 2 sprigs of fresh rosemary

Directions

  • Slice a slit in one side of each date, allowing you to insert a small chunk of cheese into it. Slice the Serrano ham into 3-inch by 1-inch pieces. Wrap a piece of the ham around each date. In a saucepan, bring the bourbon to a boil and let it reduce to cook off the alcohol. BE CAREFUL! It may ignite. Let it boil for 3-4 minutes. Stir in the butter, brown sugar and rosemary. Lower the heat and cook, whisking occasionally, until the mixture is bubbly and thickened. Remove the rosemary sprigs. Meanwhile, heat a grill pan over medium heat. Place the dates on the grill and cook for about 8 minutes total, slightly rotating every few minutes to brown all sides. Stir the dates into the bourbon glaze and remove them with a slotted spoon. Use a toothpick or cocktail forks when serving. You could also plate the dates on a platter and drizzle them with the bourbon sauce.
