Slow Cooker BBQ Chicken Nachos

  • 1 lb Chicken, boneless skinless

  • 1 tsp Garlic powder
  • 1/4 cup Green onion
  • 1/4 cup Red onion

• Condiments

  • 1/2 cup Bbq sauce
  • 1/4 cup Ranch dressing

• Baking & Spices

  • 1 tsp Paprika, smoked

• Nuts & Seeds

  • 1 tsp Cumin

  • 12 oz Tortilla chips

  • 1 cup Cheddar cheese
  • 1 cup Marble jack cheese

Ingredients

• 1 pound boneless skinless chicken
• 1 teaspoon smoked paprika
• 1 teaspoon cumin
• 1 teaspoon garlic powder
• 1/2 cup BBQ sauce, plus more for drizzle
• 12 oz tortilla chips
• 1 cup shredded cheddar cheese
• 1 cup shredded marble jack cheese
• 1/4 cup ranch dressing
• 1/4 cup diced red onion
• 1/4 cup sliced green onion
• fresh chopped cilantro

Directions

• Place chicken in slow cooker
• Whisk together paprika, cumin, garlic powder and 1/2 cup BBQ sauce
• Pour over chicken
• Cover and cook on high for 3-4 hours or low for 6-8
• Remove chicken and shred, return to slow cooker to soak up juices for 10 minutes
• Place chips on a parchment lined cookie sheet
• Top with chicken and cheese
• Place in oven (preheated to 425) for 5 minutes or until cheese is melted
• Top with more BBQ sauce, ranch dressing, onions and cilantro and serve immediately
