Ingredients

• 4 lbs boneless skinless chicken thighs
• 2 TBSP Knorr Caldo de Tomate con Pollo Bouillon
• 4 cups water
• 1 red onion, diced
• 1 - 8 oz jar prepared mole sauce
• 2 tsp kosher salt
• 2 tsp black pepper
• 2 tsp garlic powder
• Creamy Guacamole Recipe

Directions

• Place chicken in the bottom of the slow cooker. Cover with spices, mole sauce, and vegetables.
• Mix the water and bouillon until blended. Pour over chicken in slow cooker.
• Cook on high for 4 hours (or low for 8 hours) or until the chicken shreds easily with a fork.
• Serve over rive with a salad and dollop of creamy guacamole.
