1 Whole (3-5 pound) chicken, rinsed and giblets removed
1 Lemon, quartered
2 Teaspoons salt
2 Teaspoon black pepper
½ Teaspoon garlic powder
2 Teaspoons dried thyme
1 Tablespoon dried marjoram
Directions
Place the chopped sweet potatoes, onion and celery in the bottom of a slow cooker.
Place the whole chicken on top of the vegetables, and put the quartered lemon inside the cavity of the chicken.
Mix the seasoning together in a small bowl.
Rub the seasoning all over the chicken on all sides. Lift up the skin on the breast and place a dash of seasoning on each chicken breast as well.
Fit the lid on your slow cooker and cook on high for 4-6 hours.
Optional: When the chicken is cooked through, carefully transfer it to a baking sheet (I use two sturdy flippers to stop it from falling apart). Place under the broiler for about 3 minutes to brown the skin.
