  • 2-4 Sweet potatoes, peeled and chopped
  • 1 Medium onion, chopped
  • 2 Stalks of celery, chopped
  • 1 Whole (3-5 pound) chicken, rinsed and giblets removed
  • 1 Lemon, quartered
  • 2 Teaspoons salt
  • 2 Teaspoon black pepper
  • ½ Teaspoon garlic powder
  • 2 Teaspoons dried thyme
  • 1 Tablespoon dried marjoram

Directions

  • Place the chopped sweet potatoes, onion and celery in the bottom of a slow cooker.
  • Place the whole chicken on top of the vegetables, and put the quartered lemon inside the cavity of the chicken.
  • Mix the seasoning together in a small bowl.
  • Rub the seasoning all over the chicken on all sides. Lift up the skin on the breast and place a dash of seasoning on each chicken breast as well.
  • Fit the lid on your slow cooker and cook on high for 4-6 hours.
  • Optional: When the chicken is cooked through, carefully transfer it to a baking sheet (I use two sturdy flippers to stop it from falling apart). Place under the broiler for about 3 minutes to brown the skin.
  • Serves: 1 whole chicken
