Sorrel-Raspberry - Zobo Mocktail

• Produce

  • 1 Cook the raspberry
  • 1 Lemon optional
  • 1 cup Raspberry, fresh
  • 1 1/2 cup Sorrel, dried

• Condiments

  • 1 inch A sauce pan add
  • 1 Raspberry syrup
  • 1 To make the raspberry syrup

• Baking & Spices

  • 3 cups Sugar

• Liquids

  • 3 1/4 qt Water

• Tools & Equipment

  • 1 Store in airtight container until ready to use

• Other

  • Remove from stove and strain through a fine sieve

Ingredients

• 3 quarts of water
• 1½ cup dried sorrel
• 2 cups sugar
• Raspberry Syrup
• 1 cup fresh raspberry
• 1 cup sugar
• 1 cup water
• lemon optional
• To make the raspberry syrup
• In a sauce pan add 1 cup sugar, 1 cup hot water and 1 cup fresh raspberry
• Cook the raspberry for about 5 minutes
• Remove from stove and strain through a fine sieve
• Store in airtight container until ready to use

Directions

• In a medium size pot, bring water to a boil
• Add dried sorrel and 2 cups of sugar to the boiling water
• Let it the sorrel boil/steep for 15 minutes
• Cover tightly and steep overnight
• Strain sorrel drinks in fine mesh tea strainer
• Add raspberry syrup and rum if you wish
• Chill and serve - you can garnish with lime wedge
