A fun way to eat healthy is with this delicious spiralized potato breakfast pizza! It’s simple to make and can be made ahead of time, which makes it great for busy mornings.

Ingredients

  • Extra-Light Olive Oil, for drizzling
  • 3 Medium Yukon Gold Potatoes, scrubbed and spiralized
  • 1 Small Onion, grated
  • ½ Teaspoon Paprika
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Oregano
  • Salt & Pepper
  • 2 Eggs, lightly beaten
  • 3 Eggs, well beaten
  • 1 Avocado
  • ½ Lime, juiced
  • Salt & Pepper
  • Salsa
  • Fresh Cilantro, for garnish

Directions

  • Heat a 10-inch skillet over medium-high heat and drizzle in a little bit of olive oil. Add half of the spiralized potatoes and sauté for 3-4 minutes, or just until they start to soften. Transfer the potatoes to a large bowl and repeat with the other half of the potatoes. Let the potatoes cool. Add the grated onion, paprika, garlic powder, and oregano to the bowl with the potatoes. Season the potatoes generously with salt and pepper and toss in the beaten eggs. Preheat the oven to 400º. Heat more olive oil in the same skillet over medium-high heat. Once the pan is hot, add in the potato mixture and press it down with a spatula. Let it cook for 5-8 minutes, or until the bottom is brown and crisp. Invert the potato pizza onto a plate by placing a plate over the pan and flipping it – use oven mitts to prevent burning yourself! Add a little more olive oil and slide the potato pizza back into the pan. Cook for 3-5 minutes on this side and then transfer to the oven so the potatoes can continue to cook through. Bake the potato pizza for 8-10 minutes. While your pizza is in the oven, prepare your toppings. Heat a small skillet over low heat and add some light olive oil. Scramble the eggs until cooked to your liking. Mash the avocado with the lime juice and season with salt and pepper. Top your pizza by spreading it with the mashed avocado, and then top it with the scrambled eggs, salsa, and some fresh cilantro.
