Ingredients

• ¾ cup sweet corn kernels
• ⅛ cup finely chopped carrots
• ⅛ finely chopped beans
• 2 tablespoons finely chopped spring onion whites
• 2 tablespoons finely chopped spring onion greens
• ½ teaspoon sugar
• Salt
• Pepper powder
• 1 tablespoon olive oil/ butter
• 2½ cups water

Directions

• Heat 1 tablespoon olive oil or butter in a pan. Add chopped spring onion whites and saute for a minute. Do not let it brown.
• Add finely chopped vegetables along with sweet corn kernels. Saute well for 3-4 minutes.
• Add 2½ cups water. Bring it to a boil. Cover and cook for 10 minutes till the veggies turn slightly soft. Do not let the vegetables turn mushy. Mix 2-3 teaspoon corn flour in ¼ cup water without any lumps.
• Once the veggies are cooked yet crunchy add the sweet corn slurry to the boiling soup. Mix very well.
• Simmer for 5-6 minutes. Once the soup starts to thicken add salt, sugar and pepper powder.
• Simmer for 5 more minutes. Add spring onion greens and mix well. Serve sweet corn clear soup hot.
