1/2 head cauliflower, chopped into bite sized pieces
1 small sweet potato, peeled & diced
2 cloves garlic, peeled
sea salt
Optional: grass-fed butter, plain Greek yogurt or other mix-ins
Directions
Put the chopped cauliflower, sweet potatoes and garlic in a pot. Add in plenty of sea salt and cover with water. Bring to a boil over high heat and continue to cook until sweet potatoes & cauliflower are tender (10 minutes or so). Remove from heat and drain water. Mash or blend the cauliflower & sweet potatoes (I used an immersion blender to make it smoother). Then mix in butter, a spoonful of plain Greek yogurt and season to taste!
