Ingredients

  • I large pineapple
  • 4 cup of cooked jasmine rice (best is leftover rice)
  • 2 boneless skinless chicken thighs (dice into small pieces)
  • ½ lb of large shrimp (peeled and deveined)
  • 3 eggs
  • 4 cloves garlic (peeled and finely minced)
  • 3 stalks of spring onion (finely chopped)
  • ½ Tbsp of shrimp paste
  • 2 Tbsp of ketchup
  • 2 Tbsp of fish sauce or more to taste
  • 2 Tbsp of cooking oil
  • Fried shallots crisp
  • Small bunch of cilantro leaves (roughly chopped)

Directions

  • Cut the pineapple into half lengthwise. Scoop out the meat on each half of the pineapple. Cut the meat into 1-inch cubes. Youll only need 1 cup of the pineapple cubes (drain off extra juice). Keep the rest for other use. Empty the juice thats left on the shell and set aside to place your finished dish into the pineapple shells later
  • Preheat a wok or large skillet. When the wok is hot, add in the oil. Add in the chopped garlic and shrimp paste and stir fry for about 20 seconds. Add in the chicken and stir-fry until the chicken turn opaque. Add in the shrimp and stir-fry until they turn pink. Push them to the side. Crack in 3 eggs and use spatula to break the yolk a little bit and then let it cook for about 1 minute without stirring. When the egg start to settle a little bit, stir to mix and break up the eggs a little bit. Add in the rice, ketchup, and fish sauce. Stir to mix everything. Add the pineapple cubes and stir again to mix everything. Have a taste and add more fish sauce if needed. Finally add in the green onion, give it one last stir and dish out into the pineapple shells. Garnish with some fried shallots crisp and cilantro leaves. Serve immediately
