Tortellini Soup

  • 1 lb Italian sausage

  • 2 Carrots, medium
  • 2 Celery, ribs of
  • 2 tsp Garlic
  • 1 can Italian diced tomatoes
  • 1 cup Mushrooms
  • 1 Sweet onion, Medium

• Canned Goods

  • 6 cups Beef broth
  • 1 can Tomato soup

• Pasta & Grains

  • 1 19 ounce bag Cheese tortellini, frozen

• Baking & Spices

  • 1 Salt and pepper

• Other

  • ½ box frozen chopped spinach, thawed and excess moisture squeezed out

Description

Ingredients

• 1 pound Italian sausage
• 1 medium sweet onion, chopped
• 2 ribs of celery, chopped
• 2 medium carrots, chopped
• 1 cup chopped mushrooms
• 2 teaspoons minced garlic
• 6 cups beef broth
• 1 can italian diced tomatoes
• 1 can tomato soup
• 1 19 ounce bag frozen cheese tortellini
• ½ box frozen chopped spinach, thawed and excess moisture squeezed out
• salt and pepper

Directions

• In a large stockpot, cook the Italian sausage, garlic, and onion until the sausage is completely browned. Drain.
• Add to the stockpot the celery, carrots, mushrooms, beef broth, diced tomatoes and tomato soup. Bring to a boil and reduce to a simmer. Simmer for 15 minutes.
• Add the spinach and tortellini and simmer for another 10 minutes.
• Season to taste with salt and pepper. Top with fresh grated parmesan if desired.
