These flavorful Black Bean Chicken Quesadillas are a perfect E meal on the Trim Healthy Mama plan.

Ingredients

  • 1 can black beans, drained and rinsed - or about 1 1/2 cups cooked black beans
  • 1 large can chicken breast meat, drained - or about 1 cup cooked chicken breast, chopped
  • Low carb whole wheat tortillas
  • Light Laughing Cow Cheese - we like the chipotle flavor for this recipe
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • several large pinches of fresh cilantro

Directions

  • Drain and rinse the black beans and try to shake out as much water as you can. Drain the chicken as well. Combine the black beans and chicken in a large bowl with seasonings and mix. Next, spread light Laughing Cow Cheese onto one low carb tortilla. Then add several spoonfuls of beans and chicken to one half of the tortilla and fold. Lightly spray a nonstick pan with coconut oil and toast each side of the quesadilla, cooking on medium high heat for about one and a half minutes on each side.
