Vegan Cheesy Corn Casserole

  • 4 tbsp Vegan butter
  • 1 cup Vegan sour cream

  • 1 8 oz package Corn muffin mix, vegetarian vegan

Directions

• Heat your oven to 350F. Spray a 8 or 9 square baking dish with vegetable spray
• Combine the whole corn, creamed corn, corn muffin mix, vegan sour cream, and melted vegan butter in a large bowl. Stir to combine.
• Pour the corn mixture into your prepared baking dish. Place in the oven and bake for 45 minutes. it should be golden brown when its done.
• Remove from the oven and turn the heat up to 375F.
• Top with the vegan cheddar shreds. Return to the oven and bake for another 5 - 10 minutes, until the cheese has melted.
• Remove and allow to cool for a few minutes before serving warm.
