Description
I have made these spring rolls three or four times and they are always a big hit. They are much easier to make than they look. Just be careful not to oversoak the rice paper or it will tear. The shitake mushrooms really add tons of flavor, so be sure not to skip those even if you dont like mushrooms. I serve mine with several dipping sauces, but they go best with a peanut sauce.
I just learned how to soak the rice wrappers and have been creating many interesting versions of these. They are delicious and the dipping sauces really enhance them.
