Blueberry Overnight Oats is a perfectly balanced, nourishing breakfast bowl. Antioxidant-rich blueberries collide with cashews, flaxseeds, and warming spices to start your day off on the right foot. (makes 1 bowl)

Ingredients

  • ½ cup rolled oats
  • 1Tbs. flaxseeds
  • 2/3 cup blueberries, divided
  • 2 Tbs. raw cashews
  • 1 date
  • ½ tsp. vanilla extract
  • 1 cup unsweetened almond milk
  • ½ tsp. cinnamon
  • ¼ tsp. cardamom
  • sea salt

Directions

  • In your blender, combine the almond milk, cashews, and date. Let sit for 20-30 minutes until the cashews are soft. Add the vanilla extract and 1/3 cup of the blueberries; blend until smooth. In a large breakfast bowl, combine oats, flaxseeds, cinnamon, cardamom and a pinch of sea salt. Pour the blended blueberry mixture over your oats. Stir to combine. Stir in the rest of the blueberries. Cover the bowl with plastic wrap and let sit in the fridge for 4 hours or overnight. Enjoy!
