Cheesy Buffalo Chicken Quesadillas

  • 2/3 cup Chicken, cooked and cubed

Ingredients

• 1 10 tortilla
• 2/3 c. cooked and cubed chicken
• 3 Tbsp. buffalo sauce
• 2 Tbsp. bleu cheese crumbles
• 1/3 c. shredded cheddar

Directions

• In a small bowl, toss the chicken with the buffalo sauce and bleu cheese. Spread the chicken mixture across half of the tortilla. Top with the shredded cheese and fold in half.
• Spray the outside of the tortilla with non-stick pan spray and add to a heated skillet on medium heat. Cook the quesadilla on each side for 2-3 minutes or until golden brown. Serve immediately.
