  • 2 cucumbers, peeled and chopped
  • 1 pint cherry tomatoes, cut in half
  • 1 green pepper, seeded and chopped
  • 1 small red onion, chopped
  • 1/4 cup canola oil
  • 3 tablespoons sugar
  • 3 tablespoons red wine vinegar

Directions

  • Combine the chopped vegetables in a large bowl. Whisk together the ingredients for the dressing (or shake them up in a small jar or container) until the sugar dissolves. Pour the dressing over the veggies and stir to combine. Cover and chill for at least 2 hours before serving.
