Peanut Butter Cup Brownie Bites

  • 1 oz Chocolate, semisweet
  • 2/3 cup Flour
  • 1/4 tsp Salt
  • 2/3 cup Sugar
  • 1 tsp Vanilla

Ingredients

• 5 tablespoons butter
• 2 ounces unsweetened chocolate
• 1 ounce semisweet chocolate
• ⅔ cup sugar
• ⅔ cup flour
• ¼ teaspoon baking soda
• ¼ teaspoon salt
• 1 egg
• 1 teaspoon vanilla
• 24 miniature peanut butter cups

Directions

• Preheat oven to 350 degrees. Grease mini muffin pan and set aside.
• In a double broiler, melt butter and chocolate over simmering water. Stir frequently, being careful not to burn.
• Remove from heat and stir sugar into chocolate until well blended. Let cool to just warm.
• Beat egg and vanilla into chocolate mixture until smooth.
• Add flour, baking soda and salt to chocolate mixture and stir until just combined.
• Spoon a tablespoon of batter into each muffin cup well.
• Bake for 10 minutes or until middle is almost set. Immediately press a peanut butter cup into each brownie bite so that the top of the candy is flush with the top of the brownie.
• Completely cool in muffin tin before removing.
