    • 4 oz Shrimp

    • 1 Recipe crepes

    • 3 tbsp Butter
    • 1/2 cup Heavy cream
    • 1 cup Milk
    • 1/4 cup Parmesan, grated fresh
    • 1/2 cup Swiss cheese
  • Beer, Wine & Liquor

    • 1/2 cup White wine

    • 4 ounces flounder, cooked and flakes

  • 3 Tablespoons butter
  • 2 cloves garlic, minced
  • 3 green onions, minced
  • 1½ cups mushrooms, thinly sliced
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2½ Tablespoons flour
  • 1 cup clam juice
  • ½ cup white wine
  • 1 cup milk
  • ½ cup heavy cream
  • 1 pinch cayenne
  • 1 Tablespoon Old Bay seasoning
  • ½ cup shredded Swiss cheese
  • ¼ cup grated fresh parmesan
  • 1 recipe Crepes

Directions

  • Prepare the Crepes
  • In a saucepan, melt butter over medium- high heat. Add the green onions and garlic and cook 30 seconds. Add the mushrooms and saute 3 minutes. Reduce the heat to medium and add the flour. Cook 2 minutes. Add the clam juice and white wine in stages using a whisk. Cook at simmer until the sauce starts to thicken. Salt and pepper to taste.
  • Add the milk and the cream and cook until thickened. Remove from the heat and add the cayenne.
  • Add ¾ cup of sauce to your seafood, ¼ cup Swiss cheese and ¼ cup fresh grated parmesan. Add the Old Bay seasoning.
  • Divide in equal portion.
  • Roll the crepes by placing the filling lengthwise across the center of each crepes and folding the end over the filling. Place the crepes in a baking dish, top with the remaining sauce, and ¼ cup Swiss cheese. Garnish with parsley.
