Skúffukaka - Icelandic Brownies

  • 78 50 g dark chocolate
  • 500 g All-purpose flour
  • 15 g Baking powder
  • 1/2 tsp Cinnamon, ground
  • 40 g Cocoa powder
  • 200 g Confectioners' sugar
  • 300 g Sugar
  • 20 g Vanilla sugar

  • 1 Coconut flakes

  • 80 ml Coffee
  • 50 ml Coffee cooled down

  • 200 g Butter
  • 150 ml Milk

• Other

  • 150 g Skyr

Directions

• Preheat the oven to 175 °C / 350 °F.
• Grease and line a 35cmx25cm / 14 inch x10 inch bakingtray.
• In a bowl, mix flour, baking powder, cinnamon and cocoa.
• In another bowl, cream sugar, vanilla sugar and eggs till fluffy.
• Add milk, butter, chocolate and coffee.
• Add the flour mixture to the wet mixture and mix until just combined. Dont overmix the batter.
• Add Skyr and give it a short mix till just combined.
• Pour the batter into the baking tray and divide evenly. Bake in the oven for 40 minutes.
• Let the cake cool on a wire rack before adding the frosting.
• Put all the ingredients into a bowl and mix until the vanilla sugar is dissolved and you have a smooth frosting.
• Pour the frosting over the cooled down cake and spread evenly. Top with coconut flakes to taste.
