Sprinkles and mini chocolate chips make these no-bake granola bites a fun and healthy treat to snack on each day.

Directions

  • In a saucepan heat the coconut oil, honey, and peanut butter until melted and creamy. Stir in the vanilla. Pour over the oats in a large bowl. Stir until thoroughly coated. Let cool on the counter for 30-45 minutes. You can refrigerate it to help cool it down, if needed.
  • Stir in the mini chocolate chips and sprinkles. Take Tablespoons of oats in your hand and press very firmly until it forms a ball shape. You will have to squeeze the mixture very firmly to get it to stay in a ball. Set on a piece of wax paper to dry. Makes 15 granola bites. Store in a sealed container on your counter.
