Ingredients

  • 2 Tbsp Avocado Oil
  • 2 cups spiralized Zucchini Noodles (zoodles)
  • 1/2 cup spiralized Raw Beet Noodles
  • 2 Tbsp unsalted Pine Nuts
  • 2 Tbsp raw unsalted Pumpkin Seeds
  • 1 cup cooked Quinoa
  • 1 cup fresh Spinach leaves
  • pinch Salt and Black Pepper

Directions

  • Gather ALL ingredients and implement prep steps (chop, dice, etc).
  • In a large, nonstick skillet over medium-high heat, add AVOCADO OIL; heat until shimmering (2-3 min).
  • Add ZUCCHINI NOODLES and BEET NOODLES; sauté until slightly tender (about 3 minutes).
  • Sprinkle PINE NUTS and PUMPKIN SEEDS into pan; sauté until nuts become lightly toasted and fragrant.
  • Add cooked QUINOA; sauté until warmed through.
  • Add SPINACH and cover to lightly steam; sprinkle in SALT and PEPPER to taste.
  • Serve warm or cold.
