Ingredients

3 large sweet potatoes
1 T cinnamon

Directions

Line a baking sheet with parchment paper and preheat oven to 275 F. Wash and dry sweet potatoes, then slice potatoes 1/3 inch to 1/2 inch thick. Place the sliced potatoes on baking sheet and sprinkle lightly with cinnamon. Bake for 6 hours. After 6 hours, turn off your oven and leave them in the oven as it cools. Potatoes will have shrunk significantly (which is why you want the thick cuts) and should be nice and chewy.
