  • ¼ pound raw shrimp
  • 1 pound ground pork
  • 2 garlic cloves, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 (1-inch) fresh ginger, peeled and chopped
  • 1 small can water chestnuts, drained and chopped
  • ¼ cup green onions, chopped

  • Filling:
  • 1 pound ground pork
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 teaspoons sesame oil
  • 2 tablespoons shoyu
  • 2 tablespoons oyster sauce
  • 1 egg
  • Wonton wrappers
  • Bowl of water
  • Oil for frying

Directions

  • Peel and devein fresh shrimp and remove tail.
  • Filling: In a large mixing bowl, add ground pork and mix into pork the following: garlic, soy and oyster sauce, ginger, water chestnuts, green onions, and shrimp. Mix until mixture becomes sticky and tacky.
  • Rectangular shape: Take one wrapper and a heaping spoonful of filling and place in the center. Next, wet all sides of wrapper then fold over and seal.
  • Fry: Heat temperature to 350 degrees and fry in small batches until cooked through and browned.
  • Combine and mix filling ingredients together; set aside.
  • Place wax paper and spread out wonton wrappers.
  • Using a regular spoon, scoop filling and place in the center of wrapper.
  • Folding: Dip fingertips in water and wet edges of wrappers. Then fold in half and press and seal edges well. See video for different ways to fold your wrappers.
  • Cooking: Pour oil in skillet enough to fry gau gee. Then turn on heat to medium. If oil is too hot, wrappers may burn and meat will not be cooked through. Test oil by placing a small piece of wrapper in hot oil, if it immediately rises then its ready to start frying gau gee.
  • Fry until meat is cooked through. Depending on cooking temperature and amount of meat mixture is used, it should take about a minute on each side.
  • Place cooked gau gee on paper towels and let cool before eating.
